Caramel Pumpkin Chai Latte with Pumpkin Cold Foam

Method
 

  1. Brew the chai tea strong and set it aside.
  2. In a small saucepan over medium heat, whisk together the milk, pumpkin puree, caramel sauce, maple syrup, pumpkin pie spice, vanilla extract, and cinnamon until hot and well combined. Do not let it boil.
  3. Pour the brewed chai into a mug or heat-safe glass, then add the pumpkin-caramel milk mixture and stir until smooth.
  4. For an iced version, let the chai mixture cool slightly, fill a glass with ice, and pour the latte over the ice.
  5. To make the pumpkin cold foam, combine the heavy cream, milk or half-and-half, pumpkin puree, powdered sugar if using, and a small pinch of pumpkin pie spice in a frother, blender, or jar. Froth or shake until thick and airy.
  6. Spoon or pour the pumpkin cold foam over the latte.
  7. Drizzle with additional caramel sauce and finish with a light sprinkle of pumpkin pie spice before serving.

Notes

For a sweeter latte, add more maple syrup or brown sugar to taste. Use any milk you prefer, and serve hot or over ice. A milk frother, blender, or tightly sealed jar can be used to make the cold foam.
