Ingredients
2 steaks (Ribeye, Sirloin, or Filet Mignon), about 1 inch thick
4 tablespoons unsalted butter
4–5 garlic cloves, minced
2–3 sprigs fresh thyme or rosemary
1 tablespoon olive oil
Salt, to taste
Black pepper, to taste
1 teaspoon lemon juice (optional)
Instructions
Prepare the Steak: Pat the steaks dry with a paper towel. Season both sides generously with salt and black pepper. Let them sit at room temperature for 20-30 minutes.
Make the Garlic Butter: In a small saucepan, melt the butter over low heat. Add the minced garlic and cook for 1-2 minutes until fragrant. Stir in the fresh herbs and lemon juice (if using). Set aside.
Cook the Steak: Heat a cast iron skillet over medium-high heat. Add the olive oil. Once hot, place the steaks in the skillet. Sear for 3-4 minutes on each side for medium-rare.
Baste with Garlic Butter: Reduce the heat to medium. Add the garlic butter to the skillet. Tilt the pan and spoon the butter over the steaks for 1-2 minutes.
Rest and Serve: Transfer the steaks to a cutting board and let them rest for 5-10 minutes. Slice and serve with the remaining garlic butter sauce.
Notes
Steak Doneness: For medium-rare, aim for an internal temperature of 130-135°F (54-57°C). Use a meat thermometer for accuracy.
Herb Substitutions: If you don’t have fresh herbs, use 1 teaspoon of dried thyme or rosemary.
Storage: Store leftovers in an airtight container in the fridge for up to 2 days. Reheat gently in a skillet to avoid overcooking.
